But the borders were defined by the UN correct? For two states. So why is it Israel continues to annex land allocated for a Palestinian homeland?

Greece is not oppressing any minority within or outside it's borders, nor is it annexing land and building settlements outside its borders, and then building security walls through another peoples land, nor is Greece facing terrorism and constant barrages of rockets.
